If you want to make good tea, you need to pay attention to certain principles (semi-fermented tea).
Tea brewing is like art, there are different ways to interpret it; here we've compiled some important principles that you need to pay attention to,and once you understand the principles, you can also try to come up with a set of your own personal brewing system!
1.Tea leaves Despite the fact that the higher the price the better the tea, finding your preferable tea is the most important; different species, origins, fermentations all affect the properties of tea leaves. We welcome you to come to any Fu Xin stores and have a sit. Please allow us to make an introduction to you and help you to find your own personal flavor.
2.Water We recommend that you try to use your own filtering machine at home to filter water or mineral water; if you are daintier about the quality of water, you may also try to get mountain spring in the mountains. No matter what kind of water you use, please remember to boil the water to 100 degree Celsius before drinking it.
3.Pots We recommended using pots that are made of ceramics, as for choosing cup with cover or teapot, our suggestion is to use the pearl glazed 150 cc international standard tasting cup and later change to cup with cover which requires more techniques in operation.
4.The amount of water (quantity of tea) The amount of tea will affect the degree of its flavor, therefore we recommend that you start with the method of covering the bottom of the pot with tea leaves, and then you can adjust the amount of tea used according to your own personal taste (for a 150 cc international standard tasting cup, the recommended tea used is 8g ± 2g).
5.Injection of boiling water Because the tea brew comes from the impact of hot water pouring over tea leaves with speed, so the speed of injection will also greatly affect the quality of tea brew. Normally we would recommend to handle the injection gently, and it's advisable to pour hot water with a 15 degree angle from the outside, in this way, the tea would taste smoother and sweeter.
6.Brewing time You need to remember the first injection, because you need to let the tea leaves open up, so our recommendation for ordinary Oolong tea is as followed: for the first injection, the brewing time is 40 seconds, followed by 40, 30 and 40 seconds for later brewing, successively increasing five seconds of brewing time, and so on so forth. Fu Xin tea could be brewed (adding hot water) up to 10 times or more (you could also consider personal taste and accordingly increase or scale down the immersion time).
